Flourless Almond Banana Coconut Pancakes Recipe + Giveaway 5/4 US

I love coconut. In the Philippines, ground old coconut is placed on top of delicacies like "bibingkas" and "pichi-pichi", to name a few of my favorites, and I LOVE to sprinkle a lot of extra ground cocomut on top because I love the coconut taste. I also love drinking "buko" juice (coconut juice) with shredded young coconut. So, when I was given the chance to try the Coconut Flour, which honestly I'm not familiar with, I grabbed the chance because I love coconut. :)

Morning Pep sent me a 4 lb. bag and a 1 lb. bag of their 100% Organic Coconut Flour and I was excited to try it. Before I share with you my recipe, here's something about the Morning Pep's 100% Organic Coconut Flour from the company:

I received the Morning Pep's Coconut Flour in a 4 lb. and a 1 lb. bag. Both are in a plastic stand-up bag with a resealable top.

Since I'm already fond of Morning Pep's Almond Flour, I decided to substitute the Morning Pep's Coconut Flour to my Flourless Almond Banana Pancakes.

For this recipe, I used:
- 4 Tbsp. Morning Pep Coconut Flour
- 1/4 Cup of Vanilla Soy Milk
- 2 Bananas
- 2 Eggs (can be with or without the yolk)
- 1 tsp. Baking Powder
- 1/8 Cup almonds
- butter (for the pan when cooking the pancakes)

First, I mash the bananas in a bowl.

Then, I combine all the remaining ingredients in the bowl with the mashed bananas.

I mix the pancake batter until it's well-mixed. The batter wouldn't look as smooth as a normal flour pancake because of the banana.

I heat the pan to low heat, place a small amount of butter (just enough so that the pancakes wouldn't stick) and then place approximately 1 tablespoon of the pancake batter.

I suggest doing smaller-sized pancakes when cooking this because compared to a flour-based pancake, the Flourless Almond Banana Coconut Pancake crumbles easier.

The Morning Pep's Coconut Flour gave my pancakes a subtle hint of coconut taste which really complemented the bananas and almonds. It has a natural sweetness to it which contributed to the natural sweetness of the bananas.

I like how the Coconut Flour replaces a regular flour because it has lower carbs, high fiber content and is very low in cholesterol. For those who are looking for gluten-free food and alternatives, this is a must try because it taste really good.

I can't wait to try other recipes using the Morning Pep's Coconut Flour. :)

  5. I love anything to do with coconut. I really enjoy that flavor and I would really like to try this flour for pancakes also, it sounds great. I do need more fiber also.
