Not Your Usual Banana Almond Pancakes Recipe Using Morning Pep's Almond Flour + Giveaway 5/4 US

I love pancakes but I try to limit and stay way from eating it because of the carbs. I eat it once in a while but there are days when I just crave for them. I feel guilty when I give in to my cravings and honestly, I feel bad if I don't.

Thanks to my sister, I learned and loved a recipe to satisfy my cravings without having to sacrifice my guilt when I eat pancakes made from flour.

I've never heard about Almond Flour before and honestly, I wouldn't have learned about this kind of flour and recipe if not for my sister. So, thanks to her, I learned this yummy, easy to make, homemade Not Your Usual Banana Almond Pancake. Read on below for the recipe. :)

When I received the Almond Flour from Morning Pep, I was excited to see how it would compare to a regular pancake. Their Almond Flour is available in 2 sizes: a 5 lb. bag and a 2 lb. bag. Both are in resealable plastic packages to easily retain the freshness of the almond flour once opened.

The Almond Flour has a yellowish color and looks much coarser than a regular flour. It also doesn't have any smell.

Here is a quick product description from the company:

We used the ingredients above to make approximately 7 pieces of 6" inch diameter pancakes:
- 1/3 Cup Morning Pep Almond Flour
- 2 Bananas
- 1/4 tsp. Baking Powder
- 2 Eggs
- Pinch of Salt
- Optional: 7 pcs. whole raw almonds (I crushed it manually since I don't have crushed almonds at home)

First, I mashed the bananas in a large bowl.

Add the 2 eggs on the mashed bananas.

Add 1/3 cup of the Almond Flour from Morning Pep.

Add 1/4 tsp. of baking powder into the mixture and a pinch of salt. Then mix.

Optional: I added the crushed almonds after the salt and the baking powder. If you don't like to add in crushed almonds, you can skip that part and proceed to the directions below. :)

Next, I heated our pan and placed a bit of butter to prevent the Banana Almond Pancakes from sticking to the pan. Cook similar to a regular pancake.

Serve with our without syrup. I prefer to eat it by itself with no syrup because the natural sweetness of the fresh bananas is already in the Banana Almond Pancakes.

My daughter, on the other hand, prefers to add a little bit of syrup on her Banana Almond Pancakes.

This recipe is a hit in our family and I'm really happy that it tasted really good. I only needed a small amount of the Almond Flour to make approximately 7 pieces of the 6 inch diameter pancakes, so the 5 lb. bag will last a long time.

I like how I can satisfy my pancake cravings without having to feel guilty after eating it because of the Banana Almond Pancake recipe my sister taught me. These pancakes also makes me feel full faster and longer. I like the high protein content and the lower carbs in each serving of our Banana Almond Pancake.

  1. I love to use flours for my baking that are different from "white flour." I bet that this Almond Flour would make my breads taste delicious.

  6. I love almond flour, having tried it once, and I would love to try more things with it, such as a pie crust for the spring rhubarb pies!!

  7. I love the versatility of almond flour. I'm allergic to almonds but my husband loves almond flour desserts. I really want to try the coconut flour.

  8. I HAVE NEVER TRIED ALMOND FLOUR. I LIKE THAT IT HAS A HIGH FIBER COUNT. YOU WOULD THINK IT WOULD SMELL LIKE ALMONDS. DOES IT GIVE YOUR BAKED GOODS AN ALMOND FLAVOR? RAW ALMONDS ARE ONE OF MY FAVORITE SNACKS.
